Pina Colada Pie

Ingredients

  •  1 ready-made graham cracker pie crust (9 inches)
  •  1 can (20 ounces) crushed pineapple, well drained
  •  1 package (3.4 ounces) instant coconut cream pudding mix
  •  1 cup cold milk
  •  1/2 cup coconut rum (optional for adults)
  •  1 container (8 ounces) frozen, whipped topping, thawed
  •  1/2 cup grated, sweetened coconut
  •  maraschino cherries for decoration (optional)

1 .Take out your graham cracker cake base and place it on top. This will be the cozy bed for our tropical filler.
2.In a large bowl, combine the well-drained, chopped pineapple-coconut cream pudding mixture. Stir well until you see that they get along very well.
3. Gradually stir in the cold milk and coconut rum (if using) until the mixture is smooth and it is clear that they belong together.
4.Gently fold in the whipped topping until a fluffy cloud appears to sink into the mixture. Everything should look smooth and cloud-like without the whipped cream sticking out.
5. Pour this heavenly mixture into the graham cracker crust and spread it to create a smooth surface, like the calm sea at dawn.
6.Sprinkle the top with shredded coconut to give it the look of a sandy beach.
7. Let it rest in the fridge for at least 4 hours or until set so you have time to think about how much joy it will bring you.
8. When ready to serve, garnish each slice with a maraschino cherry to add a touch of color and fun.

Variations and Tips

– If you are serving this sweet to young people or would rather avoid alcohol, you can replace the coconut rum with coconut extract mixed with pineapple juice. They retain the tropical taste without the stimulating effect.
– For a dairy-free version, use commercially available non-dairy milk and heavy cream.
– To make it extra special, toast the shredded coconut in a frying pan until golden brown and then sprinkle on top. It provides a wonderful crunch and a nutty taste.- If someone at the table doesn’t like cherries, don’t worry, just leave them out. The cake will still feel like a warm hug from a tropical breeze.
