Pineapple Chewy Bars

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (20 oz) can crushed pineapple, well-drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup sweetened shredded coconut (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Mix the Wet Ingredients:
    • In a separate bowl, beat the eggs and then add the melted butter and vanilla extract. Mix until well combined.
  4. Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the well-drained crushed pineapple. If using, fold in the chopped nuts and shredded coconut.
  5. Bake:
    • Spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
    • Allow the bars to cool completely in the baking dish on a wire rack. Once cooled, cut into squares and serve.
