Pineapple Chewy Bars
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (20 oz) can crushed pineapple, well-drained
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup sweetened shredded coconut (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- Prepare the Dry Ingredients:
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- Mix the Wet Ingredients:
- In a separate bowl, beat the eggs and then add the melted butter and vanilla extract. Mix until well combined.
- Combine Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the well-drained crushed pineapple. If using, fold in the chopped nuts and shredded coconut.
- Bake:
- Spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the bars to cool completely in the baking dish on a wire rack. Once cooled, cut into squares and serve.
