  • 4–5 medium russet or gold potatoes, thinly sliced (⅛–¼ inch)

  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken

  • ½ cup milk

  • 1 cup shredded cheddar cheese (or Colby Jack)

  • ½ cup sour cream (optional for extra creaminess)

  • Salt & pepper, to taste

Topping (Optional)

  • Extra ½ cup cheese

  • Parsley or chives for garnish

Instructions

1. Preheat

  • Preheat oven to 350°F (175°C).

  • Grease a 9×13-inch baking dish.

2. Cook the ground beef

  • In a large skillet, cook ground beef over medium heat.

  • Add onion (and garlic, if using) and cook until beef is browned and onion is soft.

  • Season with salt, pepper, paprika, and Italian seasoning.

  • Drain excess fat and set aside.

3. Make the sauce

In a medium bowl, whisk together:

  • cream of mushroom soup

  • milk

  • sour cream

  • 1 cup cheese

  • a pinch of salt & pepper

Mix until smooth.
