RACHEL SANDWICH

  • Thousand Island Dressing
  • ½ cup mayonnaise
  • 2 tablespoons grated onion
  • 2 tablespoons ketchup
  • 2 tablespoons pickle sauce
  • 1 pinch paprika
  • 1 pinch salt
  • Rachel Sandwich
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 cup creamy coleslaw
  • 1 lb Turkey slices or more, depending on your appetite
  • 3 tablespoons unsalted butter

Instructions

Mix mayonnaise, grated onions, ketchup, pickled relish candies, paprika and salt.
Place a piece of Swiss cheese on each slice of bread. Spread the slaw evenly and place it on the cheese half of half of the slices. Place the turkey on the other half of the slices.Divide the thousand island dressing evenly as you spread it over the turkey. Sandwich the slices by combining a turkey slice with a coleslaw slice.
Butter each sandwich. Place the sandwich, butter side down, in a hot skillet over medium-low heat. Now brush the side up with butter.Cover the pan loosely with aluminum foil. Cook until the bottom is golden brown, then turn. Cover and cook until other side is golden brown. Cook until sandwich is heated through and cheese is melted.
