Make five-star jam and a coconut slice with a few simple ingredients. It will become the children’s favorite lunch box!
INGREDIENTS
- 2 cups flour
- 1 cup granulated sugar
- 125g unsalted Devondale butter, cold, diced
- 3 eggs
- 1 teaspoon vanilla essence
- 3/4 cup raspberry jam
- 2 cups Coles desiccated coconut
METHOD
Step 1
Preheat the oven to 180°C. Grease and line a lamington tin with a depth of 3 cm and dimensions 24 cm x 29.5 cm (base).
Step 2
Mix together the flour, 1/2 cup sugar and butter until the mixture resembles breadcrumbs. Add 1 egg and vanilla.The dough forming process.
Step 3
Press the dough into the bottom of the prepared pan. Bake for 15-20 minutes or until lightly browned. Spread the jam on a warm surface.
Step 4
Stir in remaining eggs and remaining 1/2 cup sugar.Mix with coconut. Spread the jam over it. Bake for 25 minutes or until golden brown. Allow to cool completely in the pan. To cut in pieces.surcharge
