Rectangular Cream Cake with Fresh Berries

Ingredients:

Cake:

  •  1 1/2 cups all-purpose flour
  •  1 1/2 teaspoons baking powder
  •  1/2 teaspoon salt
  •  1/2 cup unsalted butter, room temperature
  •  1 cup granulated sugar
  •  2 large eggs
  •  1 teaspoon vanilla extract
  •  1/2 cup milk

Cream Filling:

  •  2 cups heavy cream
  •  1/2 cup powdered sugar
  •  1 teaspoon vanilla extract

Decoration:

  •  1 cup whipped cream
  •  Fresh strawberries, halved
  •  Fresh blueberries

Instructions:

1. Prepare the Cake:
– Preheat your oven to 350°F (175°C). Grease and flour a rectangular baking dish.
– In a medium bowl, whisk together the flour, baking powder, and salt.
– In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
– Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
– Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

2. Prepare the Cream Filling:
– In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.

3. Assemble the Cake:
– Once the cake is completely cooled, carefully cut out a rectangular section in the center of the cake, creating a well for the cream filling.
– Fill the well with the prepared cream filling, spreading it evenly.

4. Decorate the Cake:
– Spread whipped cream over the top and sides of the cake, smoothing it out with a spatula.
– Decorate the top of the cake with halved strawberries and fresh blueberries.
– Optionally, you can pipe additional whipped cream around the edges for an extra decorative touch.

5. Chill and Serve:
– Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
