These Golden Mediterranean Salmon Cakes bring together the richness of salmon, the saltiness of feta cheese, and the earthy freshness of spinach for a wholesome dish that’s bursting with flavor. Perfect as an appetizer, lunch, or light dinner.


Ingredients:

  • 2 cans (6 oz each) salmon, drained and flaked

  • 1 cup cooked spinach (squeezed dry and chopped)

  • 1/3 cup crumbled feta cheese

  • 1/2 cup breadcrumbs (or almond flour for low-carb)

  • 1/4 cup finely chopped red onion

  • 2 cloves garlic, minced

  • 2 eggs

  • 1 tablespoon lemon juice

  • 1 teaspoon dried oregano

  • Salt & black pepper to taste

  • 2 tablespoons olive oil (for frying)


‍ Instructions:

1. Mix the Ingredients:

  • In a large bowl, combine salmon, spinach, feta, breadcrumbs, onion, and garlic.

  • Add in the eggs, lemon juice, oregano, salt, and pepper. Mix until well combined.

2. Shape into Patties:

  • Form the mixture into 8 small cakes or 4 large ones.

  • If the mixture feels too wet, add a bit more breadcrumbs to firm it up.

3. Cook the Cakes:

  • Heat olive oil in a skillet over medium heat.

  • Fry salmon cakes for 3–4 minutes on each side, or until golden brown and cooked through.

4. Serve:

  • Serve hot with a side of tzatziki, Greek salad, or lemon wedges.


Serving Tips:

  • Make them into mini cakes for appetizers or party platters.

  • Delicious inside a pita wrap with cucumber and yogurt sauce.
