Sausage and Cheese Breakfast Casserole

Ingredients:

  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dry mustard
  • 4 cups cubed bread (about 8 slices)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the Sausage: In a large skillet over medium heat, cook the sausage until browned and crumbly. Drain any excess grease and set aside.
  3. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, black pepper, and dry mustard.
  4. Layer the Casserole: Spread the cubed bread evenly in the prepared baking dish. Sprinkle the cooked sausage over the bread. Add the diced bell peppers, onions, and tomatoes (if using).
  5. Add the Cheese: Sprinkle the shredded cheddar and mozzarella cheeses over the sausage and vegetable layer.
  6. Pour the Egg Mixture: Pour the egg mixture evenly over the casserole.
  7. Bake: Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
  8. Serve: Let the casserole cool for a few minutes before serving.
