Ingredients:

For the Meatloaf:

  • 1 1/2 pounds ground chicken
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 6-8 slices of deli ham
  • 6-8 slices of Swiss cheese or Gruyère cheese

For the Topping:

  • 1/4 cup breadcrumbs
  • 1 tablespoon melted butter
  • 1/2 teaspoon dried parsley (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, milk, egg, Dijon mustard, garlic powder, onion powder, salt, black pepper, and dried thyme. Mix until all ingredients are evenly combined.
  3. Assemble the Meatloaf:
    • Take half of the chicken mixture and press it into the bottom of the prepared loaf pan, spreading it out evenly.
    • Layer the slices of ham over the chicken mixture, followed by the slices of Swiss or Gruyère cheese.
    • Cover the ham and cheese with the remaining chicken mixture, pressing it down firmly to enclose the filling.
  4. Prepare the Topping: In a small bowl, mix the breadcrumbs with the melted butter and dried parsley (if using). Sprinkle this mixture evenly over the top of the meatloaf.
  5. Bake: Bake the meatloaf in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
  6. Rest and Serve: Allow the meatloaf to rest for about 5-10 minutes before slicing. This will help it hold together when served.
  7. Optional Sauce: For an extra touch, you can make a simple sauce by mixing 1/2 cup of Dijon mustard with 1/4 cup of honey and a teaspoon of apple cider vinegar, and drizzle it over the meatloaf slices.
