Instructions

  1. Prepare the Ingredients:
    • Separate the bok choy leaves and trim the ends. Chop the scallion greens finely.
  2. Cook the Noodles and Bok Choy:
    • Bring 4 cups of water to a boil in a large saucepan. Add the dry noodles and cook according to the package instructions (usually 2–3 minutes).
    • Two minutes before the noodles are done, add the bok choy leaves to the boiling water to blanch them.
    • Drain the noodles and bok choy, rinse them under cold water to stop the cooking, and set aside.
  3. Prepare the Stock and Cook the Shrimp:
    • In a separate pot, bring the stock to a boil. Add the peeled and deveined shrimp to the boiling stock and cook until they curl up and turn pink, about 1–2 minutes depending on their size.
