This cheesy hamburger potato soup is a cozy, filling dish that brings together ground beef, tender potatoes, crispy bacon, and melty cheese—all slowly cooked to perfection. Perfect for busy weeknights or cold winter days, this recipe is both budget-friendly and crowd-pleasing!

Ingredients

  • 1 lb ground beef

  • 6 medium potatoes, peeled and diced

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1/2 cup cooked bacon, crumbled

  • 3 cups chicken or beef broth

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup heavy cream or milk

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Optional: chopped green onions or parsley for garnish

Instructions

1. Brown the Ground Beef

In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

2. Add to Slow Cooker

In your slow cooker, add the cooked ground beef, diced potatoes, onion, garlic, crumbled bacon, and broth. Stir in paprika, salt, and pepper.

3. Cook

Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.

4. Add Cheese & Cream

About 20–30 minutes before serving, stir in shredded cheese and cream. Let it melt into the soup for a rich, creamy texture.

5. Serve

Ladle into bowls and top with fresh green onions or parsley if desired. Serve hot with crusty bread!

Tips & Variations

  • Use Velveeta for extra creamy texture.

  • Add chopped carrots or celery for more veggies.

  • Ground turkey can replace beef for a lighter option.

  • Leftovers store well in the fridge for up to 3 days.
