Introduction:

Slow Cooker Witches Brew Stew is a spooky and hearty dish perfect for fall, particularly around Halloween. Made with hot sausage, ground beef, and an array of vegetables, this stew is a playful take on a traditional hamburger soup. The whimsical carrot pumpkins and skull-shaped mushrooms add a fun twist, making it a great meal for family gatherings or Halloween parties.

Ingredients:

  • 1 lb ground beef
  • 1 lb hot breakfast sausage (use mild if you don’t prefer spicy)
  • 3-4 large carrots, sliced and shaped into pumpkins
  • 2 cups small diced gold potatoes
  • 3 celery ribs, diced
  • 1 cup diced leeks (1 large leek)
  • 1 tsp minced garlic
  • 1 Tbsp Italian herb seasoning
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 10.5 oz Campbell’s condensed French Onion soup
  • 10.5 oz Campbell’s condensed tomato soup
  • 1.5 cups water
  • 32 oz beef broth
  • 10 mushrooms (cut in half and shaped into skull faces)

Instructions:

  1. Prepare the meat: In a large skillet, cook the ground beef and hot sausage over medium-high heat until browned. Crumble the meat and drain off the excess fat.
  2. Prepare the slow cooker: Add the cooked meat to the slow cooker.
  3. Shape the carrots: To make carrot pumpkins, cut two straight slits for the stem, and then cut triangles from the sides of the stem. Slice into rounds to form pumpkin shapes.
  4. Add vegetables: Place the shaped carrots, diced potatoes, celery, leeks, garlic, Italian herb seasoning, salt, and pepper into the slow cooker. Pour in the condensed soups and broth.
  5. Cook: Set the slow cooker on HIGH for 4 hours or LOW for 8 hours.
  6. Prepare the mushrooms: Just before the cooking time is done, shape the mushrooms by cutting them in half and using a straw to poke out eyes. Use a knife to create nose slits and other skull-like features.
  7. Add the mushrooms: Add the mushrooms to the slow cooker in the last 10 minutes of cooking so they retain their shape.
  8. Serve: Serve the stew hot, accompanied by garlic bread, cornbread, or your favorite side dish.

Conclusion:

This Slow Cooker Witches Brew Stew is a flavorful, fun, and festive dish perfect for Halloween or any fall gathering. The combination of hot sausage, ground beef, and vegetables creates a hearty stew, while the playful vegetable shapes make it a hit with kids and adults alike. It’s an easy, crowd-pleasing recipe that will add a touch of spooky magic to your meal!
