  • 1 lb (450 g) calamari (squid), cleaned and cut into rings

  • 3 tablespoons butter

  • 4 garlic cloves, minced

  • 1 tablespoon soy sauce

  • 1 teaspoon chili flakes or chili paste

  • ½ teaspoon paprika (optional)

  • Salt and black pepper, to taste

  • 1 tablespoon cornstarch (optional, for extra crispiness)

  • Green onions or parsley, for garnish

  • Oil for frying (vegetable or canola)


Instructions

  1. Prep the Calamari
    Rinse and pat the calamari dry. Toss with salt, pepper, and cornstarch if using for added crispiness.

  2. Fry the Calamari
    Heat a skillet over medium-high heat with a thin layer of oil. Fry the calamari in batches, 2–3 minutes per side, until lightly golden. Remove and drain on paper towels.

  3. Make the Garlic Butter Sauce
    In the same pan, melt butter. Add minced garlic and sauté for 1 minute. Stir in soy sauce, chili flakes or paste, and paprika.

  4. Combine and Glaze
    Return fried calamari to the pan. Toss quickly to coat with the sauce for 1–2 minutes.

  5. Serve
    Garnish with green onions or parsley. Serve hot with rice, noodles, or as a snack.

Notes

  • Avoid overcooking the squid—it becomes rubbery. Quick, high-heat cooking keeps it tender.

  • Cornstarch adds a nice golden texture but is optional.

  • Frozen calamari works well—just thaw and dry thoroughly.

  • Customize spice levels with more chili flakes or fresh chopped chilies.

  • Best served fresh, but leftovers can be stored for up to 2 days in the fridge.
