Ingredients

  • 2 Tbsp. lemon juice
  • 1/4 tsp. cayenne pepper
  • Salt and pepper to taste (recommended: 1 tsp. salt and 1/2 tsp. pepper if using low-sodium broth)

Instructions

  1. Preparation: Cut the cauliflower into rough florets and chop the onion.
  2. Sauté: In a large pot, heat the coconut butter over medium heat. Add the diced onion and sauté for 2-3 minutes until it starts to turn translucent. Add minced garlic and sauté for another minute.
  3. Cook the Vegetables: Add the cauliflower florets and broth to the pot. Bring to a boil, then reduce the heat to medium-low. Cover and let it simmer for about 20 minutes or until the cauliflower is tender.
  4. Add Greens: Add the spinach, parsley, lemon juice, and cayenne pepper to the pot.
  5. Blend: Use an immersion blender to purée the soup until it is smooth (2-3 minutes). If you don’t have an immersion blender, transfer the soup in batches to a regular blender, blend until smooth, and return it to the pot.
  6. Season: Taste the soup and add salt and pepper as needed. Adjust the cayenne and lemon juice to your liking.
  7. Serve: Garnish with parsley, a sprinkle of cayenne, olive oil, or hot pepper sauce if desired.
