Ingredients:

  • ½ tsp garlic powder

For the filling:

  • 10 oz frozen chopped spinach, thawed and well-drained
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning

For topping:

  • ½ cup ketchup
  • Additional mozzarella cheese (optional)

Instructions:

  1. Preheat and prepare: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix the meatloaf base: In a large bowl, combine the ground meat, breadcrumbs, eggs, milk, and seasonings. Mix until well incorporated.
  3. Prepare the filling: In another bowl, mix the drained spinach, mozzarella, Parmesan, and Italian seasoning until evenly combined.
  4. Assemble: On a sheet of parchment paper, press the meat mixture into a 12×8-inch rectangle. Spread the spinach mixture evenly over the meat, leaving a 1-inch border.
  5. Roll the loaf: Starting from a shorter side, roll the meat tightly into a log, enclosing the filling. Seal the edges and ends to prevent the filling from spilling out.
  6. Bake: Transfer the loaf to the prepared baking sheet, seam-side down. Spread ketchup over the top and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Rest and serve: Allow the meatloaf to rest for 10 minutes before slicing. Garnish with additional mozzarella if desired.
