Sticky Toffee Pudding is a classic British dessert, famous for its moist, sponge-like cake made with dates and drenched in rich toffee sauce. The cake is baked on top of a toffee sauce, with even more sauce poured over it when serving, making it a decadent, crowd-pleasing dessert. Serve it with whipped cream or vanilla ice cream for an extra indulgence.

Ingredients:

For the Toffee Sauce:

  • 2 cups (480 ml) heavy cream
  • ½ cup (99 g) dark brown sugar
  • 2½ tablespoons golden syrup or molasses
  • Pinch of salt

For the Pudding:

  • 6 oz (170 g) pitted dates, chopped
  • 1 cup (240 ml) water
  • 1 teaspoon baking soda
  • 1¼ cups (150 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 4 tablespoons (57 g) unsalted butter, softened
  • ¾ cup (149 g) granulated sugar
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8½-inch soufflé dish or a similar-sized baking dish.
  2. Make the Toffee Sauce: In a medium saucepan, combine the heavy cream, dark brown sugar, golden syrup (or molasses), and salt. Bring to a boil, stirring often. Lower the heat and simmer for about 5 minutes, until the sauce thickens and coats the spoon.
  3. Pour half of the toffee sauce into the greased baking dish and place it in the freezer while preparing the pudding. Reserve the other half for serving.
  4. Prepare the Pudding: In a saucepan, heat the chopped dates and water until boiling. Remove from heat and stir in the baking soda. Set aside but keep warm.
  5. In a bowl, whisk together the flour, baking powder, and salt.
  6. In a separate bowl, beat the butter and sugar until light and fluffy. Gradually add the eggs and vanilla extract, beating well. The mixture may look curdled—this is normal.
  7. Stir in half of the flour mixture, followed by the date mixture, then add the remaining flour mixture. Mix until just combined.
  8. Remove the soufflé dish from the freezer and pour the batter over the toffee sauce.
  9. Bake for 50 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  10. Let the pudding cool slightly before serving. To serve, pour the reserved toffee sauce over the warm pudding. Whipped cream or vanilla ice cream is a perfect accompaniment.

Conclusion:

Sticky Toffee Pudding is a rich, comforting dessert that combines the sweetness of dates with a luscious toffee sauce. This delightful treat is perfect for special occasions or a holiday gathering, ensuring a warm and indulgent end to any meal. Serve it with extra toffee sauce and whipped cream for the ultimate dessert experience.
