Strawberry Cheesecake Stuffed French Toast

Ingredients:

  • For the Filling:
    • 8 oz (1 package) cream cheese, softened
    • 1/4 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 cup diced fresh strawberries
  • For the French Toast:
    • 8 slices of thick bread (brioche, challah, or Texas toast work well)
    • 3 large eggs
    • 1/2 cup milk
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 2 tablespoons butter for cooking
  • For the Topping:
    • Powdered sugar (for dusting)
    • Fresh strawberries, sliced
    • Maple syrup or strawberry syrup

Instructions:

  1. Prepare the Filling:
    • In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
    • Gently fold in the diced strawberries until evenly distributed. Set aside.
  2. Assemble the French Toast:
    • Take two slices of bread and spread a generous amount of the strawberry cheesecake filling on one slice. Top with the second slice, creating a sandwich. Repeat with the remaining bread and filling.
  3. Prepare the Egg Mixture:
    • In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  4. Cook the French Toast:
    • Heat a large skillet or griddle over medium heat and add a tablespoon of butter.
    • Dip each stuffed sandwich into the egg mixture, coating both sides. Allow any excess to drip off.
    • Place the coated sandwiches on the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Add more butter to the skillet as needed.
  5. Serve:
    • Dust the cooked French toast with powdered sugar.
    • Top with fresh strawberry slices and drizzle with maple syrup or strawberry syrup.
  6. Enjoy:
    • Serve immediately while warm.
