Ingredients

  • 1 box graham crackers

  • 1 lb fresh strawberries, hulled and sliced

  • 2 (3.4 oz) boxes instant vanilla pudding mix

  • 2 cups cold milk

  • 1 (8 oz) package cream cheese, softened

  • 1 (8 oz) tub whipped topping (Cool Whip), thawed

  • 1 (3 oz) box strawberry gelatin (for topping color, optional)

  • Extra whipped topping or frosting (pink, for the top layer)

  1. Prepare the pudding filling:
    In a large mixing bowl, whisk together vanilla pudding mix and milk. Let it sit for 2 minutes to thicken.

  2. Blend the cream cheese:
    In another bowl, beat cream cheese until smooth. Add it to the pudding mixture and stir until creamy.

  3. Fold in whipped topping:
    Gently fold in the whipped topping to create a fluffy, mousse-like filling.

  4. Layer the dessert:

    • Place a single layer of graham crackers in the bottom of a 9×13-inch pan.

    • Spread half of the filling over the crackers.

    • Add a layer of sliced strawberries.

    • Repeat with another layer of graham crackers, the remaining filling, and more strawberries.

    • Finish with a final layer of graham crackers.

  5. Add the topping:

    • Mix whipped topping with a few spoonfuls of strawberry gelatin powder (optional) for color and flavor.

    • Spread this evenly over the top layer of graham crackers.

  6. Chill:
    Cover the dessert and refrigerate for at least 4 hours (or overnight) to allow the layers to set and soften.
