Strawberry Mousse Cups

Ingredients:

  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup finely chopped dark chocolate (optional, for texture)

Instructions:

  1. Prepare the Strawberry Puree:
    • In a blender or food processor, puree the chopped strawberries until smooth.
    • In a medium saucepan, combine the strawberry puree, granulated sugar, and lemon juice. Cook over medium heat until the sugar is dissolved and the mixture is slightly thickened, about 5-7 minutes. Remove from heat and let it cool.
  2. Bloom the Gelatin:
    • In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for a few minutes to bloom.
    • Once bloomed, microwave the gelatin mixture for about 10 seconds or until it is dissolved. Stir it into the cooled strawberry puree.
  3. Whip the Cream:
    • In a large bowl, beat the heavy whipping cream and powdered sugar with an electric mixer until stiff peaks form.
  4. Combine:
    • Gently fold the strawberry puree into the whipped cream until well combined. If using, fold in the finely chopped dark chocolate for added texture.
  5. Fill the Cups:
    • Spoon the strawberry mousse into individual serving cups. Smooth the tops with a spoon or spatula.
  6. Chill:
    • Refrigerate the mousse cups for at least 2 hours, or until set.
  7. Serve:
    • Serve chilled, straight from the cups.
