Strawberry Mousse Cups
Ingredients:
- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 2 teaspoons unflavored gelatin
- 2 tablespoons cold water
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 cup finely chopped dark chocolate (optional, for texture)
Instructions:
- Prepare the Strawberry Puree:
- In a blender or food processor, puree the chopped strawberries until smooth.
- In a medium saucepan, combine the strawberry puree, granulated sugar, and lemon juice. Cook over medium heat until the sugar is dissolved and the mixture is slightly thickened, about 5-7 minutes. Remove from heat and let it cool.
- Bloom the Gelatin:
- In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for a few minutes to bloom.
- Once bloomed, microwave the gelatin mixture for about 10 seconds or until it is dissolved. Stir it into the cooled strawberry puree.
- Whip the Cream:
- In a large bowl, beat the heavy whipping cream and powdered sugar with an electric mixer until stiff peaks form.
- Combine:
- Gently fold the strawberry puree into the whipped cream until well combined. If using, fold in the finely chopped dark chocolate for added texture.
- Fill the Cups:
- Spoon the strawberry mousse into individual serving cups. Smooth the tops with a spoon or spatula.
- Chill:
- Refrigerate the mousse cups for at least 2 hours, or until set.
- Serve:
- Serve chilled, straight from the cups.
