This beautiful Strawberry Shortcake Cheesecake combines three of my favorite foods (cake, strawberries, and cheesecake) into one beautiful dessert that’s perfect for celebrating!

If you’ve been reading the blog for a while, you know that I love strawberries. They have been my favorite fruits since I was a child. My dad still buys them for me when they’re in season and I go visit.

When I was asked to help Driscoll’s Strawberries celebrate Strawberry Shortcake Day, I couldn’t wait.Strawberry shortcake has been a classic dessert for over 100 years and Dricoll’s is certainly the strawberry brand I prefer in my shortcake. They always have the most beautiful and fragrant berries! I don’t know about you, but I smell my strawberries to choose the best ones. 🙂

When I was thinking about what twist I could give to the traditional dessert, this cheesecake was one of the few ideas that quickly came to mind. It’s a great showcase for strawberries, and with a full layer of fruit cake on the bottom, you get the full layer strawberry cake experience right in a cheesecake! How to Make Strawberry Shortcake Cheesecake

I started making this recipe by baking the cake. Believe it or not, I have never baked a cake from scratch!

Shortcake is a little different than the typical cake. It somewhat resembles a sweet cookie, but has a slightly doughy consistency. However, it crumbles more than a cake.So for the cupcake recipe, I went straight to the experts: Driscoll’s. I borrowed the cake from her favorite strawberry cake recipe. It’s easy to do. Even easier to prepare than a cake.

The cake is topped with a thin layer of cheesecake to hold everything together and then topped with whole strawberries.Aren’t they beautiful there?

They are then completely covered with a light vanilla no-bake cheesecake and some whipped cream. The cake is then garnished with more strawberries and some strawberry sauce.

Absolute perfection! The combination of flavors and textures is just right. The dense, crumbly cake with sweet, fresh berries and soft, creamy cheesecake is as perfect as you expect. And it combines all the flavors of a good strawberry cake into one super fun and delicious cheesecake. Seriously, you won’t want to share it.

So it’s time to gather your ingredients and your Driscoll’s strawberries. Let’s celebrate National Strawberry Shortcake Day!Hmmm!
