 Introduction

Looking for a dessert that’s as beautiful as it is delicious? These Strawberry Shortcake Cheesecake Rolls bring together all the flavors of a classic strawberry shortcake with a creamy twist! The pink sponge cake wraps around a silky cheesecake filling, topped with whipped cream, crumbled cake, and juicy strawberries. Ideal for birthdays, brunches, or any festive occasion!

Ingredients

For the Cake:

  • 1 box strawberry cake mix (or homemade equivalent)

  • Eggs, oil, and water (as per cake mix instructions)

  • 1/2 tsp vanilla extract

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup heavy whipping cream

For Garnish:

  • Fresh strawberries, halved

  • Extra whipped cream or frosting

  • Crumbled cake or vanilla cookie crumbs

 Instructions

1. Prepare the cake base

Bake the strawberry cake in a jelly roll pan lined with parchment paper at 350°F (175°C) for 10–12 minutes. The cake should be thin and pliable.

2. Roll while warm

Once baked, immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Gently roll the cake (with the towel) from the short side and let it cool completely.

3. Make the cheesecake filling

In a bowl, beat the softened cream cheese with powdered sugar and vanilla. In another bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture until smooth and fluffy.

4. Assemble the roll

Carefully unroll the cooled cake. Spread the cheesecake filling evenly across the surface, then roll it back up tightly (without the towel this time). Chill in the refrigerator for at least 1–2 hours to set.

5. Decorate

Trim the ends for a clean look. Pipe whipped cream on top, sprinkle with crumbled cake or cookies, and garnish with halved strawberries.

Tips

  • Chill the roll before slicing for clean, sharp cuts.

  • Add chopped strawberries to the filling for extra texture.

  • Use parchment paper to make rolling easier and prevent sticking.

 Conclusion

These Strawberry Shortcake Cheesecake Rolls are the definition of show-stopping desserts—light, creamy, fruity, and completely irresistible. A gorgeous addition to your dessert table that tastes just as dreamy as it looks!
