Strawberry Shortcake Ritz Icebox Cake – hasn’t that simply bought a ring to it? I’ve continually been a fan of those simple, throw-it-all-together muffins that seem like a million bucks as soon as they’re all set. It’s like magic, isn’t it? This one is a twist on the basic strawberry shortcake; it swaps out the typical sponge for buttery Ritz crackers for a little savory-sweet dance in your mouth. I’m speaking layers of strawberry cream sandwiched between crisp crackers that soften into a cake-like texture. Perfect for these days when you are crazed with work however nonetheless prefer to whip up a stunner of a dessert. Or, you know, simply craving a candy repair with minimal fuss.
INGREDIENTS
- two cups of clean strawberries, hulled and sliced
- 1/4 cup granulated sugar
- two cups heavy whipping cream
- half of cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container Ritz crackers (approximately one hundred crackers)
- Mint leaves, for garnish (optional)
INSTRUCTIONS
1. Let’s begin with the strawberries. Toss your sliced berries with the granulated sugar and let them sit down for about 10 minutes. This will coax out these beautiful juices and make our strawberry layer even extra sumptuous.
2. On to the cream – whip the heavy cream with powdered sugar and vanilla extract till you’ve obtained stiff peaks. Don’t over whip, though, or you may go into the land of butter, and we’re no longer making a sandwich!
3. Now, we layer! Spread a skinny layer of whipped cream on the backside of your serving dish and then cowl with a layer of Ritz crackers. Spread a layer of strawberries, with some of that juice over the crackers.
4. Repeat the layers – cream, crackers, strawberries – till you run out or attain the pinnacle of your dish, ending with a layer of cream.
5. Cover and sit back the cake in the fridge for at least four hours, however in a single day is your golden ticket. The crackers want time to soften into that ideal cakey texture.
6. Once you’re geared up to serve, garnish with mint leaves if you’re feeling a bit fancy.
