1 lb (450 g) ground beef

1 small onion, diced

1 cup uncooked white rice

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) tomato sauce

2 cups beef broth

1 teaspoon Italian seasoning

1 ½ cups shredded mozzarella cheese

Instructions
Step 1: Brown the Beef
In a large skillet or deep pan, heat olive oil over medium heat.
Add the ground beef and cook until browned. Drain excess fat.
Step 2: Sauté the Vegetables
Add chopped onions and bell peppers. Cook for 4–5 minutes until slightly soft.
Stir in garlic and cook for another minute.
Step 3: Add Rice and Sauces
Pour in the uncooked rice, diced tomatoes, tomato sauce, and beef broth.
Season with Italian seasoning, salt, and pepper. Stir to combine.
Step 4: Simmer and Cook
Bring the mixture to a boil, then reduce heat.
Cover and simmer for 18–20 minutes, or until the rice is tender and liquid is absorbed.
Step 5: Add Cheese
Remove from heat. Stir half of the cheese into the casserole.
Sprinkle the remaining cheese on top and cover until melted.
Step 6: Garnish and Serve
Top with fresh parsley if desired. Serve warm and enjoy!
