Sweet and Sour Meatballs with Pineapple

Ingredients:

  • For the meatballs:
    • 1 pound ground beef or pork
    • 1/2 cup breadcrumbs
    • 1/4 cup finely chopped onion
    • 1/4 cup milk
    • 1 egg
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/2 teaspoon garlic powder
  • For the sauce:
    • 1 cup brown sugar
    • 1/2 cup apple cider vinegar
    • 1/3 cup ketchup
    • 2 tablespoons soy sauce
    • 1 teaspoon garlic powder
    • 1 can (20 oz) pineapple chunks, drained (reserve juice)
    • 2 tablespoons cornstarch
    • 1/4 cup water

Instructions:

  1. Make the Meatballs:
    • In a large bowl, combine ground beef or pork, breadcrumbs, chopped onion, milk, egg, salt, pepper, and garlic powder. Mix until well combined.
    • Form the mixture into small meatballs, about 1 inch in diameter.
  2. Cook the Meatballs:
    • In a large skillet over medium heat, cook the meatballs until browned on all sides and cooked through. You may need to do this in batches to avoid overcrowding the skillet. Remove the meatballs from the skillet and set aside.
  3. Prepare the Sauce:
    • In the same skillet, combine brown sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and the reserved pineapple juice. Bring the mixture to a boil, stirring occasionally.
  4. Thicken the Sauce:
    • In a small bowl, mix cornstarch and water until smooth. Gradually add this mixture to the sauce, stirring constantly until the sauce thickens.
  5. Combine Everything:
    • Add the cooked meatballs and pineapple chunks to the skillet with the sauce. Stir to coat the meatballs and pineapple evenly with the sauce.
  6. Simmer:
    • Reduce the heat to low and let the meatballs simmer in the sauce for about 10-15 minutes to allow the flavors to meld together.
  7. Serve:
    • Serve the sweet and sour meatballs over cooked rice or as an appetizer with toothpicks.
