Ingredients:
- 1 pound ground beef
- 2 cups macaroni
- 1 cup shredded cheddar cheese
- 1 package taco seasoning
- 1 small onion, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup water
- 1/4 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Cook macaroni according to package directions; drain and reserve.
In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced meat, breaking up the meat with a spoon and cook until the meat is browned.Drain excess fat from pan and add taco seasoning, diced tomatoes and water. Stir and bring to a simmer.
Add the cooked macaroni to the pan along with the milk and half of the grated cheese. Stir until cheese is melted and pasta is evenly coated.
Sprinkle the remaining cheese on top, cover the pan and let stand until the cheese melts on top.Serve hot with toppings of your choice, such as sour cream, diced tomatoes or sliced ​​avocados.
