Instructions

  1. Prepare the Pasta Shells:
    • Preheat your oven to 350°F (175°C).
    • Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Taco Meat:
    • In a large skillet, brown the ground beef or turkey over medium heat. Drain any excess fat.
    • Add the taco seasoning packet and water, stirring to combine. Simmer for 5 minutes or until the sauce thickens.
    • Stir in the drained diced tomatoes and remove from heat.
  3. Stuff the Shells:
    • In a mixing bowl, combine the ricotta cheese, egg, and half of the shredded cheddar and Monterey Jack cheeses.
