Tater Tot Breakfast Bowl with Sausage Gravy
Ingredients:
- For the Tater Tot Breakfast Bowl:
- Tater tots (enough to serve your desired number of bowls)
- 15 large eggs, scrambled
- 1 cup shredded cheddar cheese (or your preferred cheese)
- Diced tomatoes (optional)
- Cooked breakfast sausage, crumbled
- Salt and pepper, to taste
- For the Sausage Gravy:
- 1 lb breakfast sausage (pork or turkey)
- 1/4 cup all-purpose flour
- 2 cups milk (whole milk works best)
- Salt and pepper, to taste
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- 1/4 teaspoon crushed red pepper flakes (optional, for a bit of heat)
Instructions:
- Prepare the Tater Tots:
- Cook the tater tots according to the package instructions until they are crispy and golden brown. Set aside.
- Make the Sausage Gravy:
- In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into crumbles as it cooks.
- Once the sausage is cooked, sprinkle the flour over the sausage and stir to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually add the milk, stirring constantly, until the mixture thickens and becomes a creamy gravy. This may take 5-7 minutes.
- Season the gravy with salt, pepper, garlic powder, onion powder, and crushed red pepper flakes to taste. Keep warm.
- Scramble the Eggs:
- In a separate pan, scramble the eggs to your desired doneness. Season with salt and pepper to taste.
- Assemble the Breakfast Bowl:
- Start by placing a generous portion of tater tots in each bowl.
- Top with a serving of scrambled eggs.
- Add the crumbled cooked sausage on top of the eggs.
- Sprinkle with shredded cheddar cheese.
- Pour a ladle of warm sausage gravy over the top.
- Add diced tomatoes if desired for a fresh touch.
- Serve:
- Serve immediately while everything is warm. This hearty breakfast bowl is perfect for a filling and comforting morning meal!
