Any advice for making crispy chips? Without a doubt, a dish that everyone will enjoy, both small and large gourmets. However, to achieve this, you need to know how to prepare them according to the rules of the art. First of all, it is important to choose potatoes with floury flesh (Bintje, Agria, Caesar, Marabel, etc.).If you’re a purist, you can follow the Belgians’ example and use beef fat instead of vegetable oil.
- Potatoes 1 kg
- Sunflower seed oil with
- Cold water with
- White vinegar 2 tablespoons
Peel the potatoes and cut them into sticks approx. 1 cm thick (you can also leave the peel on, but wash it very well).
Place the potatoes cut into pieces in a large container and pour in enough water to cover them.
Add two tablespoons of vinegar and stir a little.
Place in the fridge for at least 20 minutes. An hour would be perfect.
Remove the potatoes from the water and dry them if possible (you can use a cloth or napkins).
