Ultimate Mac n Cheese Recipe
Ingredients
- 16 oz elbow macaroni (or any tube pasta)
- 2 tablespoons unsalted butter
- 1 tablespoon all-purpose flour
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- 1/2 cups Panko Breadcrumbs
- 2 tablespoons olive oil
- 1/4 teaspoon paprika (optional for a smoky flavor)

Prepare the Pasta: First, cook the elbow macaroni in a large pot with salt water until al dente. Drain and set aside, allowing the pasta to undercook slightly as it will continue to cook in the oven.
Prepare the roux: In a large saucepan, melt the butter over medium heat. Sprinkle in the flour and stir, stirring constantly, to create a smooth, thick base for your sauce, about 1 minute.
Prepare the cheese sauce: slowly pour in the milk, stirring constantly to avoid lumps.Bring the mixture to a boil and then reduce the heat. Add the cheddar and mozzarella cheeses and stir until completely melted and the sauce is smooth. Season with salt and pepper.
Combine and mix: Add the cooked pasta to the cheese sauce and stir gently until all the pasta is evenly coated. Pour this mixture into a greased baking dish.Add topping: In a small bowl, toss panko breadcrumbs with olive oil and paprika. Sprinkle this topping over macaroni and cheese to add crunch and extra flavor.
Bake to perfection: Preheat the oven to 190°C (375°F) and bake for about 20 minutes, or until the top is golden brown and crispy.
