Unstuffed Pepper Bowls

INGREDIENTS

  • four bell peppers (red, green, yellow)
  • 1 medium white onion
  • 2 tbsp bacon grease or oil
  • 2 lbs floor beef
  • 2 tbsp chili powder
  • 1 half tsp black pepper
  • 1 half of tsp smoke paprika
  • 2 tsp oregano
  • 2 tsp cumin
  • minced garlic
  • 28 oz beaten tomatoes
  • 4 half of cups red meat broth
  • 3 cups lengthy grain white rice rinsed
  • 8-12 oz shredded cheese quesadilla or Monterey jack

INSTRUCTIONS

  1. Put 3/4 of peppers/onions in a giant pan and prepare dinner down on med warmness in bacon grease.
  2. In separate pan season and prepare dinner floor red meat with salt, pepper, and garlic powder.
  3. Once peppers/onions are smooth add seasonings and garlic.
  4. Pour in beaten Tomatos and add floor red meat as soon as cooked through.
  5. Add red meat broth and carry to simmer.
  6. Turn warmth down to low medium and work in rice after rinsing till water is clear.
  7. Cover and enable rice to simmer approx 15-20 min till rice has absorbed liquid and is fluffy.
  8. Turn warmness to low, add shredded cheese and cowl till cheese is melted. Enjoy!
