Description

Watermelon honey is a naturally sweet, fruity syrup made from just one ingredient — fresh watermelon! Also known as watermelon molasses or watermelon concentrate, this thick, glossy spread is perfect for drizzling on pancakes, yogurt, or toast. It contains no added sugar, making it a healthier and all-natural alternative to traditional syrups and jams.

  • 1 large ripe watermelon (seedless preferred)


Instructions

  1. Prepare the watermelon

    • Cut the watermelon into chunks, removing the rind and seeds if necessary.

  2. Blend

    • Add the chunks to a blender and puree until smooth.

  3. Strain

    • Pour the watermelon juice through a fine mesh sieve or cheesecloth to remove pulp. You should get several cups of juice.

  4. Simmer

    • Pour the juice into a wide, heavy-bottomed saucepan.

    • Simmer on low to medium-low heat for 2–3 hours, stirring occasionally, until the liquid reduces and thickens to a syrup-like consistency.

  5. Cool and Store

    • Remove from heat and let cool.

    • Pour into clean jars or containers and refrigerate. It will thicken more as it cools.

Notes

  • No added sugar: The sweetness comes purely from the watermelon.

  • Shelf life: Store in the refrigerator for up to 4 weeks in a sealed jar.

  • Flavor boosts: Add lemon juice, a cinnamon stick, or fresh mint during simmering for extra flavor.

  • Uses: Drizzle over pancakes, yogurt, oatmeal, biscuits, or even mix into drinks like lemonade or tea.

  • Texture: Final consistency should resemble syrup or light jam.
