Zucchini Parmesan Chips are a very addictive, healthy snack that is super simple and easy to make with just two ingredients! Add a slice of the new Hidden Valley® Simply Ranch for dipping and you have a delicious, healthy snack the whole family will love.
Healthy snacks are kind of a contradiction, right? I mean, when I’m craving a snack, the term “healthy” doesn’t come to mind. However, I love zucchini and when combined with freshly grated parmesan, I can have a healthy snack throughout the day.
INGREDIENTS
- 1 pound zucchini or squash (about 2 medium ones)
- 1/4 cup grated Parmesan cheese (in batches)
- 1/4 cup panko breadcrumbs (in batches)
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- freshly ground pepper, The taste
INSTRUCTIONS
Preheat oven to 400 degrees. Line two baking sheets with aluminum foil and spray lightly with cooking spray.
Cut zucchini or pumpkin into 0.6 cm thick slices. Grease the slices with oil and grease them well.
In a large bowl or plate, mix together the breadcrumbs, Parmesan, salt and pepper.
Dip the slices in the Parmesan-breadcrumb mixture, spreading each slice on both sides and pressing firmly. The mixture will not completely cover each round, but will form a light layer on all sides.
Arrange the round cookies in a single layer on a baking sheet. Sprinkle the slices with the remaining breadcrumb mixture.
Bake for about 22-27 minutes until golden brown.
