CHICKEN SALAD INGREDIENTS:
- 1 lb cooked fowl breast meat, diced (about four cups)
- 2 cups seedless crimson grapes, halved
- 1 cup celery, halved lengthwise then sliced (from 2–3 sticks celery)
- 1/2 cup crimson onion, finely chopped (about half of medium pink onion)
- 1 cup pecans, toasted and coarsely chopped
CHICKEN SALAD DRESSING:
- 1/2 cup mayo
- 1/2 cup bitter cream or undeniable Greek yogurt
- 2 Tbsp lemon juice
- 2 Tbsp dill, finely chopped
- 1/2 tsp salt, or to taste
- 1/2 tsp black pepper
INSTRUCTIONS
Toast Pecans: Begin via toasting the pecans. Place them on a dry skillet over medium-low warmth and toast for 3-5 minutes, tossing often till golden and fragrant. Transfer to a slicing board, let cool, then coarsely chop and set aside.
