  • 1 lb breakfast sausage

  • 6 large eggs

  • 1/2 cup shredded cheddar cheese

  • 6–8 flour tortillas (medium size)

  • 1 tablespoon butter or oil (for cooking)

  • Salt and pepper, to taste

 Instructions

Step 1: Cook the Sausage

In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked.
Remove and drain excess grease.

Step 2: Scramble the Eggs

In a bowl, beat the eggs with a pinch of salt and pepper.
Melt butter or oil in the skillet and cook the eggs until just set, stirring occasionally.

Step 3: Assemble the Roll-Ups

Lay out a tortilla. Add a spoonful of sausage, scrambled eggs, and a sprinkle of cheddar cheese.
Roll tightly like a burrito.

Step 4: Toast the Roll-Ups
