Introduction

Scotcharoos are one of those nostalgic, no-bake treats that everyone loves — crunchy, chewy, and topped with a smooth layer of chocolatey-butterscotch goodness. They come together in minutes, making them perfect for busy days, parties, or whenever you want something sweet without turning on the oven. If your fiancé loves them, this recipe will make them extra happy!

Ingredients

  • 6 cups Rice Krispies cereal

  • 1 cup light corn syrup

  • 1 cup granulated sugar

  • 1 cup creamy peanut butter

  • ½ bag butterscotch chips

  • ½ bag chocolate chips (optional but traditional — you can mix with the butterscotch)

Instructions

  1. Prepare the base:
In a large saucepan over low heat, combine the corn syrup and sugar. Stir until the sugar dissolves and the mixture just begins to bubble—do not let it boil.

  2. Add peanut butter:
Remove the pan from heat and stir in the peanut butter until smooth and fully combined.

  3. Mix with cereal:
Add the Rice Krispies to the mixture and stir until all the cereal is evenly coated.

  4. Press into pan:
Transfer the mixture into a greased 9×13-inch pan. Press it down gently with a spatula.

  5. Melt topping:
In a microwave-safe bowl, melt the butterscotch chips (and chocolate chips if using) in 20–30 second intervals, stirring between each until smooth.

  6. Spread the topping:
Pour the melted mixture over the cereal base and spread evenly using a spatula.

  7. Set and serve:
Let the Scotcharoos cool and set, then slice into bars and enjoy!

Conclusion

These classic Scotcharoos are quick, simple, and always a crowd-pleaser. With their crispy texture and rich peanut-butterscotch topping, it’s no wonder they’re a favorite. Perfect for potlucks, holidays, or surprising someone special — especially your fiancé!
