Ingredients:

For the Dough:

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 egg
  • 3/4 cup cold water
  • 1 tablespoon vinegar

For the Filling:

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, finely chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • 1/4 cup chopped olives (optional)
  • 1/4 cup raisins (optional)
  • 1 egg (for egg wash)

Instructions:

  1. Prepare the Dough: In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg, cold water, and vinegar. Add the wet ingredients to the flour mixture and mix until a dough forms. Turn the dough out onto a lightly floured surface and knead gently until smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  2. Make the Filling: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the chopped onion, garlic, and red bell pepper to the skillet and cook until the vegetables are soft. Stir in the cumin, smoked paprika, chili powder, salt, and pepper. Add the tomato sauce and cook for another 5 minutes, stirring occasionally. If using, stir in the chopped olives and raisins. Remove from heat and let the filling cool slightly.
  3. Assemble the Empanadas: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles of dough. Place about 1-2 tablespoons of filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges.
  4. Bake the Empanadas: Place the empanadas on a baking sheet lined with parchment paper. In a small bowl, beat the egg with a tablespoon of water to create an egg wash. Brush the tops of the empanadas with the egg wash. Bake in the preheated oven for 20-25 minutes, or until the empanadas are golden brown.
  5. Serve: Allow the empanadas to cool slightly before serving. They can be enjoyed warm or at room temperature.
