Cheesy Onion Pinwheels are a delightful appetizer or side dish, combining the flavors of caramelized onions and melted cheese, all rolled up in a flaky pastry. These pinwheels are perfect for parties, gatherings, or even as a savory snack.

Ingredients:

  • 1 sheet of puff pastry (store-bought or homemade), thawed
  • 2 medium onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with salt and pepper to taste. If using, stir in the fresh thyme leaves during the last few minutes of cooking. Remove from heat and let cool slightly.
  3. Prepare the Pastry: On a lightly floured surface, roll out the puff pastry sheet into a large rectangle, approximately 10×12 inches.
  4. Assemble the Pinwheels: Spread the caramelized onions evenly over the puff pastry, leaving a small border around the edges. Sprinkle the shredded cheddar and grated Parmesan cheese evenly over the onions.
  5. Roll and Cut: Starting from one of the long edges, tightly roll up the pastry into a log. Slice the log into 1/2-inch thick pinwheels and place them cut-side down on the prepared baking sheet.
  6. Bake: Brush the tops of the pinwheels with the beaten egg. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  7. Serve: Let the pinwheels cool slightly before serving. These are best enjoyed warm.

Tips for Perfect Cheesy Onion Pinwheels:

  • Puff Pastry: Ensure the puff pastry is well chilled before rolling it out to make it easier to handle.
  • Caramelizing Onions: Take your time to caramelize the onions properly for the best flavor.
  • Cheese Variations: Feel free to experiment with different types of cheese, such as Gruyère or Swiss, for a unique flavor twist.
