Ingredients:
- 1 sheet of puff pastry (store-bought or homemade), thawed
- 2 medium onions, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon fresh thyme leaves (optional)
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with salt and pepper to taste. If using, stir in the fresh thyme leaves during the last few minutes of cooking. Remove from heat and let cool slightly.
- Prepare the Pastry: On a lightly floured surface, roll out the puff pastry sheet into a large rectangle, approximately 10×12 inches.
- Assemble the Pinwheels: Spread the caramelized onions evenly over the puff pastry, leaving a small border around the edges. Sprinkle the shredded cheddar and grated Parmesan cheese evenly over the onions.
- Roll and Cut: Starting from one of the long edges, tightly roll up the pastry into a log. Slice the log into 1/2-inch thick pinwheels and place them cut-side down on the prepared baking sheet.
- Bake: Brush the tops of the pinwheels with the beaten egg. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
- Serve: Let the pinwheels cool slightly before serving. These are best enjoyed warm.
