Glazed Muffins

Ingredients

For the Muffins:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples or other fruits (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Muffins:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Fold in the chopped apples or other fruits if using.
    • Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  2. Bake the Muffins:
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    • Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
  3. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
    • Adjust the consistency by adding more powdered sugar or milk as needed to achieve a pourable glaze.
  4. Glaze the Muffins:
    • Once the muffins are completely cool, drizzle the glaze over the top of each muffin.
    • Allow the glaze to set before serving.
