Baked Chicken with Zucchini and Cherry Tomatoes

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 medium zucchinis, sliced
  • 1 pint cherry tomatoes, halved
  • 1 red onion, sliced
  • 1/4 cup chicken broth or white wine
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Chicken:
    • In a large bowl, coat the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper.
    • Place the seasoned chicken in a baking dish.
  3. Add Vegetables:
    • Arrange the sliced zucchini, cherry tomatoes, and red onion around the chicken in the baking dish.
    • Pour the chicken broth or white wine over the vegetables to add moisture and flavor.
  4. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
  5. Garnish and Serve:
    • Remove from the oven and let it rest for a few minutes.
    • Garnish with chopped fresh parsley before serving.
