Baked Herb Chicken Thighs
Ingredients
- 8 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1 lemon, sliced
- Fresh parsley, chopped for garnish
Instructions
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Marinade:
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper.
- Marinate the Chicken:
- Place the chicken thighs in a large bowl or a resealable plastic bag.
- Pour the marinade over the chicken and toss to coat evenly. Let it marinate for at least 30 minutes or up to overnight in the refrigerator for more flavor.
- Bake the Chicken:
- Arrange the marinated chicken thighs in a single layer in a baking dish.
- Pour the chicken broth around the chicken and place lemon slices on top.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
- Garnish and Serve:
- Remove the chicken from the oven and let it rest for a few minutes.
- Garnish with chopped fresh parsley before serving.
