Baked Herb Chicken Thighs

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 lemon, sliced
  • Fresh parsley, chopped for garnish

Baked Herb Chicken Thighs

Instructions

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Marinade:
    • In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and black pepper.
  3. Marinate the Chicken:
    • Place the chicken thighs in a large bowl or a resealable plastic bag.
    • Pour the marinade over the chicken and toss to coat evenly. Let it marinate for at least 30 minutes or up to overnight in the refrigerator for more flavor.
  4. Bake the Chicken:
    • Arrange the marinated chicken thighs in a single layer in a baking dish.
    • Pour the chicken broth around the chicken and place lemon slices on top.
    • Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
  5. Garnish and Serve:
    • Remove the chicken from the oven and let it rest for a few minutes.
    • Garnish with chopped fresh parsley before serving.
