Air Fryer Fried Chicken

Ingredients:

  • 8 chicken drumsticks or thighs (bone-in, skin-on)
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or olive oil spray

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, whisk together the buttermilk and egg. Add the chicken pieces and ensure they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Prepare the Breading:
    • In a shallow dish, combine the flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Bread the Chicken:
    • Remove the chicken pieces from the buttermilk mixture, letting any excess drip off. Dredge each piece in the breading mixture, pressing to adhere the coating to the chicken. Place the breaded chicken on a plate.
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 360°F (180°C) for about 5 minutes.
  5. Cook the Chicken:
    • Lightly spray the air fryer basket with cooking spray. Place the breaded chicken pieces in the basket in a single layer, making sure they do not touch each other. Lightly spray the tops of the chicken pieces with cooking spray.
    • Cook for 20-25 minutes, flipping the chicken halfway through the cooking time and spraying again with cooking spray. The chicken should be golden brown and crispy, and the internal temperature should reach 165°F (74°C).
  6. Serve:
    • Remove the chicken from the air fryer and let it rest for a few minutes before serving. Garnish with chopped fresh herbs if desired.
