Strawberry Cheesecake Stuffed French Toast
Ingredients:
- For the Filling:
- 8 oz (1 package) cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup diced fresh strawberries
- For the French Toast:
- 8 slices of thick bread (brioche, challah, or Texas toast work well)
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter for cooking
- For the Topping:
- Powdered sugar (for dusting)
- Fresh strawberries, sliced
- Maple syrup or strawberry syrup
Instructions:
- Prepare the Filling:
- In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the diced strawberries until evenly distributed. Set aside.
- Assemble the French Toast:
- Take two slices of bread and spread a generous amount of the strawberry cheesecake filling on one slice. Top with the second slice, creating a sandwich. Repeat with the remaining bread and filling.
- Prepare the Egg Mixture:
- In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
- Cook the French Toast:
- Heat a large skillet or griddle over medium heat and add a tablespoon of butter.
- Dip each stuffed sandwich into the egg mixture, coating both sides. Allow any excess to drip off.
- Place the coated sandwiches on the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through. Add more butter to the skillet as needed.
- Serve:
- Dust the cooked French toast with powdered sugar.
- Top with fresh strawberry slices and drizzle with maple syrup or strawberry syrup.
- Enjoy:
- Serve immediately while warm.
