Cheesy Beef and Veggie Stuffed Burritos
Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup green bell pepper, diced
- 1/2 cup fresh parsley or cilantro, chopped
- 1 cup shredded mozzarella or cheddar cheese
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 8 large flour tortillas
- 2 tbsp olive oil
Instructions:
- Prepare the Filling:
- In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the diced tomatoes, green bell pepper, chili powder, ground cumin, paprika, salt, and pepper. Cook for another 5 minutes until the vegetables are softened.
- Remove from heat and stir in the chopped parsley or cilantro. Allow the mixture to cool slightly.
- Mix in the shredded cheese until evenly combined.
- Assemble the Burritos:
- Lay out the flour tortillas on a flat surface.
- Spoon a generous amount of the beef mixture into the center of each tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom, creating a burrito shape. Ensure the filling is fully enclosed.
- Cook the Burritos:
- Preheat the oven to 375°F (190°C).
- Place the burritos seam-side down on a baking sheet lined with parchment paper or lightly greased.
- Brush the tops of the burritos with a bit of olive oil for extra crispiness.
- Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden and crispy.
- Serve:
- Remove from the oven and let cool slightly.
- Serve with your favorite dipping sauce, salsa, sour cream, or guacamole.
