Ingredients
- 4 cups rolled or crushed roasted chicken
- 3 cups of dawned ham

Käse sauce
- 4 tablespoon of butter
- 2-2 ½ cups milk
- 1 tablespoon of dijon-mustard
- ¼ tea open pepper
- ¼ tea open powder powder 87 ⅛ ¼ teaspoon ground cayenne pepper
- 2 cups grated Swiss or Gruyère cheese
- salt and pepper to taste
- 2 pinches nutmeg (optional, but recommended)
- 2 cups cooked white rice, for serving
cracker topping
- ⅓ cup melted butter
- 1 ¼ crushed Ritz crackers
- ¼ cup Parmesan cheese
- 1 tablespoon chopped fresh parsley
INSTRUCTIONS
Preheat oven to 350 degrees. Spray a 9-by-13-inch baking dish (or equivalent baking dish) with nonstick baking spray.
Mix the chicken and ham cubes in a large pot.
Combine melted butter, crushed Ritz crackers, and Parmesan cheese in a medium bowl. Set the bowl aside for a moment.In a large skillet over medium heat, melt the butter. Sprinkle in the flour and stir. Continue to cook, stirring, for about 2 minutes. Slowly stir in the milk and continue cooking until thickened. Stir in Dijon mustard, smoked paprika, garlic powder and cayenne pepper.Reduce heat to low and add Swiss cheese. Continue beating until melted. Season with kosher salt and freshly ground black pepper. Add the nutmeg.
Pour the cheese sauce over the chicken and ham.Sprinkle evenly with topping. Bake covered for 15 minutes, then uncover and bake for another 15 minutes. Sprinkle with freshly chopped parsley and serve with rice or pasta, if desired.
NOTES
Fried chicken works great for this recipe, but any shredded or diced cooked chicken will work too.
ham steak is great for this recipe.They taste great and are quite affordable.
Homemade cheese sauce takes a little longer than throwing away a can of cream, but tastes much better.
I like to serve this with white rice, fettuccine or spaghetti. Or try mashed cauliflower as a low-carb option.
