WATERGATE SALAD

Ingredients

  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 3.4 ounce box instant pistachio pudding mix
  • 1 20 ounce can crushed pineapple
  • 1/2 cup chopped pistachios and more for decoration
  • 1 1/2 Cups of miniature marshmallows
  • Maraschino cherries for decoration

Cold bowl and beaters for whipping cream. Add whipped cream and powdered sugar to the bowl. Beat at high speed until medium to stiff peaks form. Put aside.In a large bowl, combine the dry pudding mix with the chopped pineapple. Add pistachios and mini marshmallows. Add 2 cups whipping cream. Finally, cover and refrigerate for at least 1 hour before serving. Garnish with extra whipped cream, chopped pistachios and maraschino cherries.Cover with plastic wrap and refrigerate until ready to serve.

Notes

Use crushed canned pineapple in 100% pineapple juice. The juice is mixed with the dry pudding mix to make the pudding. Pineapple packed in heavy syrup is too thick.
You can replace the pistachios with chopped walnuts or chopped pecans.However, my first choice is always pistachios.
If desired, whipping cream can be substituted with an 8-ounce container of Cool Whip. I think freshly whipped cream tastes better.
For variety, add 1/2 cup shredded coconut.
Refrigerate for at least 1 hour before serving.
