These breakfast cookies combine the natural sweetness of bananas and the juicy burst of blueberries with the hearty texture of oats, creating a nutrient-packed treat perfect for busy mornings. They’re versatile, easy to make, and can be customized to suit dietary needs or personal tastes.

Ingredients

  • Bananas: Ripe ones provide natural sweetness and moisture.
  • Oats: Use rolled oats for texture; gluten-free varieties work too.
  • Blueberries: Fresh are ideal, but frozen can also be used (coat frozen berries in a bit of flour to avoid bleeding).
  • Nut Butter: Almond or peanut butter binds the mixture and adds creaminess.
  • Honey/Maple Syrup: For a touch of sweetness; optional for those reducing sugar.
  • Spices & Flavorings: A dash of cinnamon and vanilla enhance the flavor.
  • Optional Add-Ins: Chia seeds for fiber, nuts for crunch, or even dark chocolate chips for indulgence.

Instructions

  1. Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix: Mash bananas in a bowl until smooth. Stir in nut butter, sweetener, and flavorings. Then, mix in oats and any optional add-ins. Gently fold in blueberries.
  3. Shape: Scoop spoonfuls of the mixture onto the baking sheet and flatten slightly to form cookie shapes.
  4. Bake: Bake for 12-15 minutes or until golden around the edges. Let the cookies cool on the tray for 5 minutes before transferring to a wire rack.
  5. Enjoy: Serve immediately or store in an airtight container for up to 3 days.

These cookies are perfect for a grab-and-go breakfast or a nutritious snack. Pair them with yogurt or almond milk for added protein, or crumble one over a smoothie bowl for texture.
