These little golden circles are more than just a recipe; They’re a testament to the simple, homey joy that radiates from Amish kitchens, where every ingredient is valued and nothing is wasted. Onion fritters have deep roots in the Midwest soil, just like my own family. Whether you’re making them for a gathering or looking to add some comfort to a lazy, rainy afternoon, these donuts can warm hearts with their tasty homemade deliciousness. You could say that they are like little edible souvenirs of the garden harvest and the times when families gathered around the table to share the fruits of their labor.
INGREDIENTS
- 2 large sweet onions, thinly sliced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika (optional to add). smoky note)
- 1 large egg
- 3/4 cup milk
- Vegetable oil for frying
INSTRUCTIONS
1. In a large bowl, mix the flour, baking powder, salt, pepper and paprika to form the base for the doughnuts.
2. Crack the egg into a separate container, beat lightly and then add the milk.
3.Add the egg mixture to the dry ingredients and stir until well combined. It should look like a soft dough.
4. Gently fold in the thinly sliced onions, making sure each strand has a smooth layer.
5. Heat about half an inch of oil in a heavy-duty skillet to about 365°F (hot enough for some batter to sizzle, but not so hot that the oil smokes).
6. Gently pour the batter into the oil in quarter cups and flatten slightly to form pancakes or balls, whichever you prefer. Fry them until golden brown and the kitchen smells heavenly, about 2-3 minutes per side.
7. Transfer your little golden treasures to a paper towel-lined plate to drain. This will prevent them from becoming greasy.
8. Serve hot and accept praise graciously.
