Ingredients

For the Cake:

  • 2 cups all-purpose flour

  • 1 ½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tablespoon lemon zest

  • 2 tablespoons fresh lemon juice

  • 1 cup buttermilk

  • 1 teaspoon vanilla extract

  • 1 ½ cups fresh or frozen blueberries (if frozen, don’t thaw)

For the Lemonade Glaze:

  • 1 cup powdered sugar

  • 2–3 tablespoons fresh lemon juice

  • Optional: extra lemon zest or a few mashed blueberries for color


‍ Instructions

Step 1: Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.

Step 2: Mix Dry Ingredients

In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

Step 3: Cream Butter & Sugar

In a large mixing bowl, beat butter and sugar until light and fluffy, about 3–4 minutes.

Step 4: Add Wet Ingredients

Beat in eggs, one at a time. Add lemon zest, lemon juice, and vanilla extract.

Step 5: Combine & Fold in Blueberries

Alternately add buttermilk and dry ingredients to the batter, beginning and ending with the dry mix. Gently fold in the blueberries.

Step 6: Bake

Pour batter into the prepared pan and spread evenly.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let cool before glazing.


Make the Lemonade Glaze

Whisk together the powdered sugar and lemon juice until smooth. Adjust consistency by adding more juice or sugar as needed. Drizzle over the cooled cake.
