A classic meatloaf is a comforting and hearty dish that brings back the nostalgia of home-cooked meals. Topped with a sweet and tangy glaze, it’s perfect for family dinners and pairs beautifully with mashed potatoes or roasted veggies.

Ingredients

For the Meatloaf:

  • 1 lb ground beef (80% lean)
  • 1/2 lb ground pork (optional for added flavor)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning (optional)

For the Glaze:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meat Mixture:
    • In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for a couple of minutes until the breadcrumbs absorb the milk.
    • Add the ground beef, ground pork, chopped onion, bell pepper, minced garlic, egg, Worcestershire sauce, salt, pepper, and thyme or Italian seasoning. Mix well using your hands or a spoon until all ingredients are evenly combined.
  3. Shape the Meatloaf:
    • Lightly grease a cast iron skillet with a bit of oil or cooking spray.
    • Shape the meat mixture into a loaf shape in the center of the skillet, pressing it slightly to ensure it’s compact.
  4. Make the Glaze:
    • In a small bowl, whisk together ketchup, brown sugar, Dijon mustard, and Worcestershire sauce until smooth.
    • Spread half of the glaze over the top of the meatloaf.
  5. Bake the Meatloaf:
    • Place the skillet in the preheated oven and bake for about 45 minutes.
    • After 45 minutes, spread the remaining glaze over the meatloaf and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
  6. Rest and Serve:
    • Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to settle.

Conclusion

This cast iron skillet meatloaf is a savory, satisfying dish with a perfectly balanced glaze. The cast iron skillet helps create a beautiful crust while keeping the meat tender and juicy inside. Serve it with your favorite side dishes for a comforting meal that will bring warmth and flavor to the table. Enjoy!
